OUR GARDENS
Taking a short walk around the Emporium, it's easy to see where we get most of our garden fresh flavors throughout the year. You won't find our buildings lined with decorative flower beds; we use that space to grow parsley, basil, and brussels sprouts. In addition to the variety of beds scattered around the restaurant, you'll find several planting pots, mostly featuring a variety of chard. And all of that is on top of our designated garden space, which holds even more.

OUR GREENHOUSE
Our gardens provide a constant stream of garden-fresh goodies during the summer, but during the winter months we will switch to taking full advantage of our greenhouse. This was the first year testing out our greenhouse, and it's been great to see the seeds turn into food we harvested and prepared in the kitchen. We use Seed Savers’ seeds from Southeast Iowa as our main seed purveyor. Their heritage breed seeds offer a lot of variation in taste, color, and texture of vegetables.
